Melt in your mouth Gingerbread cookie recipe!
Ther

e are so many treats to choose from and to be honest, this wasn't the recipe I thought I was going to share BUT once I made my first batch and tried it, I knew I had to share this instead.
Adapted from a Betty Crocker recipe
1 c packed brown sugar
1/3 c shortening
1 1/2 c dark molasses
2/3 c water (though two of my sister in laws and I agree that we often need more water)
7 c all-purpose flour
2 tsp baking soda
2 tsp ground ginger
1 tsp ground allspice
1 tsp ground cinnamon
1 tsp ground cloves
1/2 tsp salt
In a large bowl, beat brown sugar, shortening, molasses and water with electric mixer on medium speed, until well blended. Stir in remaining ingredients. Cover and refrigerate for at least 3 hours.
Heat oven to 350 degrees F. Grease cookie sheet lightly. On floured surface, roll dough 1/4" thick. Cut with floured cookie cutters.
On cookie sheet, place cutouts about 2" apart.
Bake 10-12 minutes or until no indentation remains when touched. Immediately remove from cookie sheet to cooling rack. Cool completely, about 30 minutes.
Frost & decorate as desired.

Though I prefer mine without frosting served with a cup of coffee.
Enjoy!
